How to determine if extra virgin olive oil is rich in polyphenols?

Taste it. Firstly, extra virgin olive oil is 100% freshly squeezed olive juice. After consuming high-quality olive oil, your mouth should feel clean. During the tasting process, you should detect fruity, bitter, and pungent flavors. Polyphenols have a slightly bitter and pungent taste. If you don't experience these three flavors, it is not a good extra virgin olive oil. Additionally, premium extra virgin olive oil should not leave any oily residue in your mouth, and it should not have any taste defects.

Can high-polyphenol olive oil be used for cooking?

Yes.

How to store extra virgin olive oil?

High temperatures, sunlight, air, and time are enemies of extra virgin olive oil. After use, please tighten the bottle cap as soon as possible and store it in a cupboard away from high heat sources to reduce the impact of temperature and light. Once the bottle is opened, it is recommended to use the oil promptly. After three months, the polyphenols in extra virgin olive oil are generally oxidized and degraded.
